Good brewery again. everything went smooth. A lot of new stuff tried today as well. Lactose, apple in boil, new yeast, new hop bags. Still figuring out the hop stand, maybe do it even longer next time? Tweak the equipment profile! Had to scrape out the last liquid from the kettle. |

Wow! Fermentation really took off! After 2 days it was bubbling steady in the morning. Got a text from Lisa saying that the airlock is full of yeast and that the lid is bulging out! She replaced the airlock and released the pressure. Haha London ale 3 is violent! Smells amazing even if its yeast all over the place :) |

Moved fermenter from basement to apartment to raise temperature. Added 100g of roasted coconut flakes, 3 vanilla pods in rum, 1 kg of mashed fresh pineapple. Sampled a little taster... promising, a bit worried about too much bitterness, its a milkshake after all. Hard to determine how much coconut to take... lets see in a couple of days. Cleaned the lid and added a new airlock as well. |

Opened up and dry hopped as per recipe, was short of mosaic but added citra to fill up instead, 5g. Took a sample, forgot to read gravity but it looked like it was sitting on 25ish. Appearance is very hazy orange. Aroma is a bit alcohol, oxidised beer? Very young. Taste is coconut and vanilla up front, coconut follows through. Not much hop taste! Worried. Bitterness is perfect low with a thick and sweet taste from the lactose, that is really good actually. |

Pours very hazy light orange to yellow with small white head, head disappears after a couple of minutes and leaves no residue. Small lacing on the sides. Aroma is very fruity with pineapple and other tropical fruits. Taste is the same, very fruity and smooth... after taste lingers through with vanilla in the background. No coconut, unfortunately. Thick sweet mouthfeel as I wanted but could do with even more silky feel. More calcium chloride? |
