FIRST COOLER MASH IN A BAG
Finished with 17 qts after draining bag for 20 minutes. 1 quart short.
Used 1/2 packet of Waters Brewer Pale Ale salts. Brought the ph down to around 4.9-5.0. 1 Tbs of Sodium Bicarbonate slurry (1TBSP in a few ounces of water) brought it back up to 5.3-5.4. Used strips to check. |

Overshot gravity.
Boiled 15 minutes longer because I was targeting 10quarts kettle but should have been 12. Caught myself, stopped added 15 min addition, waited 10 min, then added flameout. Should have know when hit gravity with 1 quart under pre boil target. |

Rehydrated 1 pack US-05 in 99 degree water. Cooled wort to 83 then placed in freezer chest until 73. Cooled yeast to 75 and pitched. |

12 HOURS- Temp had dropped to 64. No activity. Raised temp to 68 with space heater.
24 HOURS- activity was evident. |

DRY HOPPING:
Added 28g Centennial and 14g Cascade @ 71F. Plan to leave 2 days then crash gelatinize. |
