Now smells malty. :) The worst of it is over, it seems. The bubbler is down to a few bubbles a minute. I couldn't be more pleased with the way this one is going.

Tasting a 12 oz I had set aside and not refrigerated. Tastes good. Smooth. VERY carbed. Almost a gusher.
I feel that 1 week or so in the bottle is good enough before refrigeration. 1.5 optimal.
 
Notes

3 weeks from kettle to table, and one hell of a punch. Bottle conditioned 1 week.
