Strike liquor was at 170.3 in HLT. Pumped 21 qts into mash tun. foundation water was 162F. Mash start temp was ~152.5. Vorlauf at 35 minutes and at end of mash. Clear wort for lauter. Mash stop temp was ~148.5. Mashed for 65 minutes. Lauter was around 50 minutes. Kept kettle temp above 140 but less than 150 during lauter. Used ~18-19 qts of 170.3 F liquor for sparge. First runnings 1.093.

Used stainless cage for nugget hops at 15 min from start of boil. Added immersion chiller, cacao nibs, and fuggel hops (in cage) at 45 minutes from start of boil. Boil was 60 minutes. OG = 1.071. Very foamy wort even without hops. Just stirring caused it to almost boil over. will add Fermcap next time to stop boil-over.

Reduced the wort temp to 70F in about 20 minutes. Racked to carboy using pump. Might have lost a qt of volume there. The wort had lots of foam and the pumping action caused a lot of turbulence. Added O2 and 1 packet of 1028 wyeast liquid yeast. Didn't break nutrients until 10-15 minutes before pouring in. Placed in fermentation chamber around 3:30 pm.

Checked at 10:30 am and there was no indication of yeast activity. strip thermometer showed 64-66F. Wyeast 1028 london ale pack taken out 3 hours before pitch but nutrients pack not popped until about 15 minutes prior to pitch. pack didn't swell at all. Figure that was cause of fermentation not starting.

Added 2 packs of white labs WLP013 london ale yeast at 7pm. let them warm to room temp and opened with sanitized scissors. Poured contents of both packs into wort. Strip thermometer read 66-67.

Checked at 11:30 am and there was some bubbling in airlock and very few krausen bubbles. Checked again at 3:30 pm and it was rockin'. 2-3 inches of krausen. At 9 pm the krausen was very close to the top of the carboy and getting 2.5 bubbles/sec.
Strip thermometer and digital inside/outside thermometer read 67.

not much going on at all in fermenter. Strip thermometer read 66-67. bumped temp to 69.4 (20.8) from 68 (20.0). Will check SG tomorrow. |

racked to secondary. tasted very good. new airlock. used SG from yesterday. CO2 in carboy prior to racking. Dark beverage.

seems to be some activity because airlock has changed. when we put it in yesterday it was pretty much 50/50 right to left chambers. I checked last night and there was none in right chamber but about halfway in tube between right and left. This morning it was 50/50 again. Yeast is dropping out and forming thin cake. strip thermometer is 66.

Pretty much the same as yesterday. I will Check SG tomorrow. Don't have sanitizer to do it today. should bottle Friday. Strip thermometer is edging towards 68 but still mostly 67.

53 12 oz bottles plus one of about 8 oz which we tasted pretty much all of. Very tasty beer. has malty sweet flavor with a chocolaty burnt aftertaste

nice body, color, and aroma. Nice porter flavor with slight chocolate taste. Great mouthfeel with right amount of carbonation.
