There was perhaps another 16-20 ounces of wort I could have collected...not quite another quart. Since the boil is so short, I didn't bother. |

Transferred from brew pot to Better Bottle. Had to work at it, but was able to eek out 5.25 into fermenter. However, it dropped when I took Hydrometer reading. Refractometer showed 1.054 or about 13.5 brix |

Pitched Yeast at 66 degrees at 930p. Took off as expected. By morning it was at 73.
I took down to ferm fridge on 3/14. Had trouble getting temp right. Went down to 64 at one point but was still fermenting vigorously. I raised thermostat, and fermentation settled around 66. |

Moved it back upstairs to kitchen to let it run as hot as it wanted. Rigged BB Blowoff and sure enough the yeast were roused and climbing out of the fermenter! Fermentation smelled lovely, as usual. |

Tasted nice. Mouthfeel was especially good. After chilling sample to drop yeast out, the flavor is good. I wish I had added chamomile. The floral scent is not present and I miss that. Also, citrus character is lower than I'd like. It's good. I'll be interested to see what it tastes like after carbing it up. |

Made a tea of 2g chamomile . Cooled slightly and added to fermenter. Also made tea of 4 fresh lavender leaves and added to fermenter. After reflection, I decided the biggest need was floral, not citrus. |

Wow. This is delicious. I think the chamomile tea added after primary fermentation is the way to go! So fragrant.
If I had a change, it would be for more citrus. Maybe next time try fresh citrus peel tea and the chamomile tea...
I cannot detect (nor can Annie) the lavender.
Delicious! Lovely body. I think the oats add that creamy, milkshake feeling. The extra rest appeared to work well. Color is nice, etc. Very pleased! |
