Put 5 quarts on stovetop to boil down more quickly. Other 7 gallons at a vigorous boil. Looking to boil off 2 gallons in 90 minutes. |

Day 1 in closet (66) - vigorous and needed blow-off after 18 hours. Moved to top of stairs (61) for a day to chill down. Bubbling to 1/2 seconds and put back in closet morning of 1/31. Now going about 1/second. Tastes really clean, hops are juicy/tropical/dank. |

Tastes bombtastic
Big bitterness, also big dank from simcoe and big fresh fruit from mosaic and nelson. Still bubbling once every 5-6 seconds. Increased temperature from 69 to 73 (heating pad) |

Cold crashed 2/7. Fined with gelatin morning of 2/8. 1/4 of beer at top is crystal clear with gradient processing down. Give it another 12 hours before kegging. |
