First time using oxygen. Did it for 40 seconds. Hope it will work. Brew day went well. The mash was very thick but I still got good conversion. I did have trouble keeping the temperature at 154. Pretty much stayed around 150 the whole time. Mash efficiency was good but the brew house efficiency dipped a little. Ended up with a tad over 4 gallons and that is probably the reason.

Racked to barrel. Used 400ml of uncared quad to rinse out barrel. Then used 500ml of whiskey to "recharge" the barrel while I bottled the quad. Swirled barrel and then drained

Filled 2 500ml bottles to top off barrel. Bottled a 6pack of unoaked. Used carb drops to carbonate the beer.

Pulled a sample from the barrel. Has faint oak which is not bad. Thinking that the other beers may have spent too much time in the barrel. Unoaked sample is also very tasty. Color is amazing with some awesome ruby highlights. Taste is very malty. Malty sweet with caramel notes I think it is pretty close to style. Has sweetness, good finish alcohol heat. Should not change too much when it is carbonated.
