Raised temp to 62F @ ~21:00. Why not?
Added 5g fermaid-K boiled in ~1c water for ~1 minute. Cooled to 90F before adding.
Lowered temp to 60F ~22:00. Thought it might be a good idea to cool it down after adding hot liquid? Raised back to 61F at 23:00.

appearance: darker side of gold, mostly opaque, light tan head ~1.5" that persists for a long time
aroma: sweet banana and a little clove, other subtle spices in there as well. smells very sweet, not quite like a hefeweizen smells, more belgian I'd say. Maybe like Leffe Blonde with more banana/complexity
Flavor: Banana, nut, a small amount of alcohol, some spice. There's quite a strong maltiness to this beer. More than I'd expect from either a Hefe or a Belgian blonde. More like a dunkelweizen? I'd prefer the maltiness to be more on the subtle side next time.
Mouthfeel: Gushed out of the bottle when I first opened, possibly due < 24hr refrigeration time. None of the bottle caps are popped out... yet. High carbonation. Rather chewy, like a Hefe.
Overall: This beer smells and looks amazing! I think the combination yeasts turned out pretty well. "Banana ice cream" is an aroma I remember smelling throughout fermentation, and that has carried over into the bottle as well. The only thing I'd change is to make it less overtly malty, since I think that's getting in the way of all the yeasty goodness.
We'll also see how this changes over time. Perhaps in a few months, this will be even better.
**EDIT**:
Added 4 _drops_ of black pepper extract to 12oz of my beer. Great improvement. Very subtle, probably not noticeable as "black pepper" if I hadn't done it myself. |
