Collected 1 gallon more wort than I wanted.

Taste is not very sweet. I didn't measure partway through the mash this time as I normally do.

Added 1.5lbs of DME to bring gravity up to anticipated 1.051 @ 7.8 gal.

Thoughts:
- Didn't add dark grains until late, but calculated pH with the dark grains. Possible pH issue?
- Sparge went VERY fast. I had to dip pitcher in sparge water to keep up. Why did this happen?

probably overcompensated after the mash for lost gravity points. I think I underestimated how much wort I actually collected.

filled the carboy very close to the neck without tilting the GF.

Split sample 50-50. Added 10 drops to one glass, tasted more chocolatey, somewhat vodka-y. Probably too much into just a small glass.

Both samples taste fantastic.

use 4.1oz table sugar

assume 5 gallons

bottled about 2 gallons without added chocolate extract (label = "XS"). Added liquid from vodka-soaked cocoa nibs to remaining 3 gallons (label = "XX").

poured into a stein glass

appearance: very dark brown and medium in clarity. Head is cappuccino-colored, formed at first by coarse foam ~2" tall, but quickly ceding back to a thin layer of fine foam.

aroma: Aroma doesn't jump out immediately (also have incense burning), but first get coffee, followed by chocolate. There's some kind of fruit in here, too, maybe acetaldehyde? Plenty of sweet caramel aroma in here, too.

Flavor: Sweet, green apple (actldhyd), subtle coffee and chocolate. The sweetness overpowers the roastiness and bitterness from the hops combined. I'd like to make a more balanced stout next time. This is definitely in porter territory, in retrospect.

Mouthfeel: very smooth, velvety, rich. Has a slight bite to it, maybe from the alcohol. Not overly carbonated, just about right. Beer has a good texture.

Overall: The acetaldehyde comes through subtly on this one, but it's still disturbing. I feel like it might have subsided a bit from earlier bottles? Still too much. The sweetness is too much as well; should add more roastiness (tried to do this in Oatmeal Stout ("baseline")).

Liz loves it, and that's what counts on this one. Would be interesting to re-do this one with less sweetness and using a different bottling bucket to avoid acetaldehyde.
 
Notes

Add only 2oz chocolate malt to the mash at the beginning.

Add the rest of the chocolate + BRB at the end of the mash (~15 mins).
