Mash maxed out the mash tun. Strike water of 130°F was added used for the protein rest( (after heating up the mash tun with previously heated 130°F H2O), and then a decoction was used for the mash. Protein rest was the standard 20 min and 60 min for the mash. 1/2 of the mash, more liquid was taken, was heated up to boiling/simmering and then added directly to the rest of the mash in the mash tun. This rose the temperature to the range of 155-162°F (due to hot and cool spots).See page 24 of notebook for more details. |
