Primary fermentation was vigorous and lasted approximately 20 hours. Fermenter was chilled in a makeshift ice bath with water temperature varying between 18 and 23 degrees Celsius. Summer brewing so air temperature varied between 30 and 38 degrees requiring frequent replacement of ice. At day 19 the seasons changed rapidly and air temperature dropped to 20-25. |
