Mashed at 44-52 for 60 minutes. Added water and let stand at 62-65. Stuck sparge. Recirculated until clearer. Pulled 3 gallons and sparged with 3.5 gallons at 172

Racked to fermentor on Imperial Stephon yeast cake. Added 1 gallon well water to fermentor to get 6 gallons. |

1.022 made small starter with wort and yeast nutrient. ON Aug 5th poured dregs of Heff and scraped krauzen off demijon till showed signs of ferm then pitched into Demijon.

Added alpha amalayse and i packed champagne yeast and took off again fromed krausen and dropped to 1.010. Racked on Aug 14th to secondary. |
