Low conversion rate?
I think the grain bin was WAY overfilled with water. Should mash MUCH thicker next time we have a large grain bill. Wouldn't go above ~5.5 gal of water. Period. |

This beer's almost two months in the bottle, and I'm ashamed I haven't yet entered a tasting note!
This bottle spent a few weeks lagering in the fridge before opening. I've had a number of other bottles that were refrigerated for ~24 hours, but they weren't the same. It seems to me that this beer really benefits from being refrigerated, though I haven't done a side-by-side (todo?) to verify that.
Appearance: dark amber, very clear at this point. Pours with a modest head of about 1/2" inch that lasts a minute. Head color is "cream" colored (think the cream on top of an espresso, and you're not far off).
Aroma: The aroma really hits you. Plum/figs/dark fruit, toffee, banana, and a bit of clove. Somewhat floral and very sweet-smelling. No trace of the apple-like aromas I'd been having troubles with of late.
Flavor: Some alcohol, cherries, some banana and a bit of clove. The flavor isn't nearly as intense as the aroma is. There's definitely an alcohol character to the beer, but it's not overly distracting. It is 8.5%, anyways, so that's probably to be expected to a point. Definitely sweet, but the sweetness has complexity, so it doesn't come off as too cloying.
Mouthfeel: Medium to full-bodied. There's a bit of a bite to it, maybe from the carbonation. It has that "prickly" variety of carbonation. Not too heavy, which is nice. Not like a lot of dopplebocks I've had that are like drinking malt syrup.
Overall: This is a fantastic beer. I think it improves with a week or two of refrigeration.
Some things that would make this beer better:
* Less alcohol character
* Balance out or reduce the sweetness somehow
Could also be interesting to make a mixed-fermentation version of this beer, which might help out with some of the sweetness and take it in an interesting direction... |
