pH at dough in was 7.13. At 15 mins into mash it was 5.56. |

Started raising the temp today. Will raise to 68-65 F over the next few days and rest for 2-3 days. Then we'll keg next week. |

Still sitting in fermenter. the temp has been at 38F for the past month. Ready to keg but wondering if the temp should be raised again...........It has that buttery flavor. Decided it wouldn't do any good at this stage |
