Had to do a very long boil (2.5 hours or so) to boil off so much wort. Went from 30 to 22 gallons. So, should be a bit darker with more caramel flavors. I took 11 gallons of this batch and put them into two carboys. |

Yeast was pitched late on Sunday because it took a very long time for the wort to get down to 50F. Actually, pitched at around 53F because the wort still wasn't down to temp. Les set aside two batches of yeast starter. Did not have Krausen last night, but it does have it this morning and now see evidence of fermentation activity. This was a very long delay to the start of fermentation on this (forgot to add O2, so that could be part of it). Hopefully, this won't result in off flavors. Also, raised temp to 52.5F last night to get it going. This will be a little strange, so will need to lager for longer than usual. |

Beer has been fermenting, albeit slowly, for the last few days and activity remains. Still have plenty of beige krausen with tan specks. Fermentation temp. at 53F (roughly). Some rotten egg smell from the airlock, likely due to pilsner malt and this yeast strain. Overall, looks okay, but concern about lag in fermentation at start. |

Raised temp to 65 overnight on 6/28 then to 60F yesterday for diacetyl rest. This resulted in renewed fermentation activity. Airlock activity has died back a bit, so will let it go one more day and then gradually bring to lagering temp (32F). |

Good Maltin essential. A bit darker with more roast flavor than expected, but with layering it will taste nice and complex. |

8.2 Brix final. Pretty nice but a little fruity now. Needs some lagering time. Racked into 2 corny kegs on 10 psi CO2. Will let sit for a while to begin lagering process. |

Carved up and very thick and creamy head. Has a bit more roasted and dark flavor and color than before. Also has a hint of vanilla. Quite nice but a bit off from previous Dunkel batches that I have brewed. |
