Notes

1 pk Lalvin 71B-1122 wine yeast, rehydrate with goferm (at least 30min)
Add honey to 1 gallon spring water, heat to aid in mixing
Add 1.5 tsp pectic enzyme - add to honey and water
Add 1 tsp yeast nutrient - add to honey and water
Add 1 tsp yeast energizer - add to honey and water
Puree fruit and add to primary, then transfer must to primary
Add spring water to 3 gallon line
Add 1/2 tsp yeast energizer and nutrient to must at 24, 48, 72 hrs
