Juice from Barnard's this year is low in sugar but a bit higher in acidity.
- no acid addition needed.
- added 63 ppm SO2 via 4 g potassium metabisulfite in 40 ml water to 6 gallons cider. |

Racked after five weeks to let clear up a bit more. Cider looked pretty clear before racking. Added five crushed campden tablets dissolved in water to new carboy before racking. Sample tasted good, delicately balanced, some body, some apple flavor remains. |
