fermentation going strong today and temp has risen to 72*F. will let it go for another day or so at this temp.

whoa is this possible?? is the brew infected? Tastes funky, dry, a little tart, some alcohol
(but no apparent fusels?). color me confused |

funky nose. hazy straw color. good body. still alcohol presence, maybe still a little hot. should be drinkable with some time to rest. Moved to a carboy and will leave in a cool corner for a while. |

Well, it is complex. still a bit hot with a bite in the finish. not sure what to make of this beer. it's been conditioning for a few months now and not certain it's getting better and not sure i like it either. |

well, it's a little better...the fusel alcohols are starting to calm down. Hopefully by this summer, it will be drinkable. |

finally pretty drinkable, but maybe a little oxidized. the yeast is pronounced as is the alcohol. |
