still in primary. incense like smell. perfumy. tart. vanillan like coating on the mouth. heavy alcohals. will be good chilled with carbonation. Age this one longer. |

Fuity, white wine like, bit o tartness. Will be good. Racked to secondary about 5 gallons in a 6 gallon carboy so adding 3lbs more of honey to even it out and another gallonish of water. Will let this age another few months. |

Winelike flavor but with less acidity. Meadlike. Really good actually - it doesn't have the funkiness a one month old wine would have - it's cleaner. berry flavors - blackberry and strawberry in particular, a touch of tartness. Should be really good sparkling but could also go dry. |

ph of 3.7. close to being ready. Very fruit acid forward with a nice clean drying finish. Could drink now but may benefit from a few months of age. "Fake" zin like flavor...the pinkish zin's. Could use some more oxidation - flavor melding. |
