way off my expected gravity , maybe due to not transfering all wort with the siphon? maybe adding to much water at flame out , and had to leave on stove top off for 20 min before cooling as i was bottling the stout receipe downstairs . |

I had the intention to pour over the yeast cake of my stout but i realized that the color would be altered and took the decision to change yeasts and use the french saison yeast smack pack wich was 6 monts old instead , i might add some brett to it to salvage this project. |

Fermentation began normally about 36 h after pitch a bit long but considering everything seems ok , I did not add any extra yeast . fermenting between 64 and 70 F so far will kick up the temp in the next few days |
