First 48 hours saw huge blow-off losses. Free rise to 81F. Transferred to chamber and reduced to 67. Stayed there four days then removed to ambient. Remained at atbout 72 then started to apply heat to 74. Tasting great. Still has a little further to go |

Very clear. Good raisiny dark fruit character. Little bit of banana or bubblegum. Slightly clovey, no real pepper |

Carbonation was low the day before so cranked up the gas pressure to 30lbs for 28 hrs or so. Seemed better after that
Taste is coming along. Lots of spicy phenols, raisin and dried fruit with rum barrel woodiness |

Nicely carbonated with good clarity. Tasting very good with lots of comments from friends. Raisin and clove really stand out |
