Added half the gypsum (1.25 tsp) to the strike-water as it was heating up. Second half to be added after hte mash, pre boil |

Strike temp was about 164, when i added the grain, initially it seemed to go down to only 160F. So I added a cup or two of cold water. Came down to 150F. Turned heat to low-med/low. At 3.5/10 dial on the stove maintaining about 151-152F with very gentle uptrending temp. Turned dial down to 1.5/10, to try to hold at 152/3. |

Gonna sparge in 4-5 qt at 170-175F for 15 min, with wort transferred to various bowls (so much volume). Then rinse the grains with 2 more quarts. Then combine the worts, then add the extract. Then start the boil |

Finished with just under 16 qts wort delisious looking dark, very sweet. Specific gravity is almost exactly 1.040 at 137F which comes to about 1.052. Sparged with ~5 qts +2 |

Cooling went VERY well with new immersion wort chiller. Probably ~12 min we were from boiling to 75F (approx brewing temp). Clearly lots of cold break formed (looks like more egg drop soup than I'm used to). Why is gravity so high?? i guess it needs to be diluted... but still |

Shocked by the high gravity of the end brew and given the robust volume I had, I used only about 12 of the (approx) 14 quarts of the end product to bring up to 5 gallons. The final solution had a gravity of 1.118!! Thats way more than I was expecting. |

Calculated my pre-boil efficiency at 95%!! That's from 6 lbs of grain in a total of 4 gallons yielding a pre-boil (and pre-LME addition!) gravity of 1.052 (from 1.040 measured at 137F). Insane. |

Priming with 3.7 oz of cane/table sugar. Boiled 2 cups. Added sugar. Boiled for another min or two. Then covered and put pot into a pan with icewater to cool. |

Final Gravity ~ 1.019 (meniscus up to 18, but above 1.02, calling it 19). Good ferment! Smells excellent, very bready, yeasty, beery. Hoppy and caramely taste. Delicious |
