Made a yeast starter two days prior used omega OYL-113 Mexican lager yeast it has settled out and completed fermentation on brew day. Fermentation at 51 for 5 days then a diacetyl rest for 24 hours and rack to secondary. Then ferment for 8 weeks at 38 degrees |

Diacetyl rest for 48 hours at 55 degrees then racked to secondary chill to 38 over a two day period and then let sit for 6 weeks |
