Notes

Mash at 110F for 20 minutes at 1.0 qt/lb. Use infusion to step to 150 for 60 minutes. Remove 1/4 - 1/3 of the mash for decoction and boil the removed portion for 15 minutes or until an iodine test shows low to no starch left in the mash tun. Add the boiled portion of the mash back to the mash tun. Lauder and sparge until 6.3 - 6.5 gallons of 1042 - 1044 sg wort is collected. If sg is low, do not be afraid to collect additional wort and extend the boil to reduce volume. Do not adjust the hopping schedule.
