Notes

Walnuts combined with enough water to make 1 gallon total volume, then gently boiled for 38 minutes on the stove. Strained out the walnuts, dissolved honey, added 1 tsp DAP and 3/4 tsp Pectic Enzyme.

Pitched Cotes de Blanc red star yeast, but temperature was still a bit too high (100F) so may need to repitch tomorrow.
