Grain temp: 69
Target strike: 160, 5 gal, 3F initial loss
9:45 - heat strike water, 7 gal, Great Oak spring water
Salts - 8g Gypsum, 4g CaCl, 2g baking soda, 1/2 campden
10:00 - remove 2gal for sparge
10:28 - flame out at 166F
Mash in - 165.5 to 149F
10:42 - start mash
10:59- 147.7F (kettle 149), set oven to warm for 3 min
pH - 5.5 test strip
11:14 - 150(kettle), set to warm
11:32 - 151(kettle), 148.2F, stir, warm off
11:48 - start hearing sparge
12:06 - sparge 176F
12:08 - mash out of oven, 153F |

Pulled 2 gal into small pot to boil faster
12:43 - start heating for boil, add fermcap
12:57 - small pot boiling
1:04 - big pot boiling, combine, add .45oz Centennial
60min - 1.2 gal boil off
2:12 - whirlfloc and chiller
2:30 - add hops and chill
3:10 - chilled to 70F |

24 hours - temp has stayed consistently 62-64 in tub of water in office closet with windows open. Layer of krausen forming, airlock activity
40 hours - 64F overnight, 1-1.5" krausen, airloçk bubbling 2-3 per second |

3:00 - put carboy in fridge to start cold crashing
8:30 - cooled to 50F, added 1/2 tsp gelatine to 1/4 cup boiled and cooled water (mixture heated to 140F) |
