Rehydrated T-58 yeast w/ 4oz h2o @ 95f. let sit 15 min. stir. 15 min stir. 15 min stir and pitch at fermenter 61f.
Put spices in bag in last 5. didn't pick much up from it. bag may have been bad idea.
pitched yeast @ 315 pm
Fermentation starting @ about 830pm. Bubbling nicely. Crazy amount of trub in fermenter. |

A bit disappointed with the fg and abv. Didn't bottle the entire volume. Just bottled about 2.5 gallons. 5 bombers and 13 12oz'ers.
We'll see the outcome in a couple weeks, but not real satisfied with this batch so far. |

This one actually turned out very well. Flavor is great. Very low abv but I like it. Really liked the yeast. For a dried yeast I was impressed. I'd use it again. |
