Notes

20.5 lbs of yams.
Brush all of them, leave skin
Use setting "thick" on mandolin
Cut into french fry longitudinally into 3rd, 4ths
Turns into 20.5 lbs of yams, same as market.

6.5 gallons water, add yams at 175, aim for 149.
Ended up 148 (maybe start mash at 178, not 175).

Put in one whole little pot of boiling water.
Ended up 148.5

Tasting notes: (2/20/16)
A:Pink, cloudy, wheat-like

S:Some alcohol, no noticeable citrus, berry or sweet potato

T:Some hops,

M: Needs more carbonation

O:Next time, 1007 German Ale Yeast b/c it carbonates faster at lower temp. Instead of 3.3 oz beet sugar, use 3.6.
