F.G. both 1.008 (Wyeast: attenuation about K 75 and S 78%).
Very pale mash with long beta rest, so low FG not unexpected. |

K: Almost clear S: Still hazy
Aroma difference is very obvious at bottling time, lots of fruit in S, clean malty aroma in K.
Both have similar mouthfeel, sweetness and hops. |

Triangle test postponed. Both are crystal clear at fermentation temp. But S develops a slight chill haze when cooled to 10 deg C |

K clear deep golden colour. Thick stable head. Clean nose, bit of hops (Saaz aroma)lot of malt. Slightly heavy and bitter for Koelsch but excellent balance. Light fruityness in the nose, Esters more in style for Alt than Koelsch but quite nice. |

Triangle test. 3 tasters, 3 glasses 2S 1K. K three times spotted. Even blind by aroma alone.
K: clean, slightly fruity, Saaz comes through, medium body well balanced with a lot of hops. Just a bit 'bigger' than regular Koelsch (if Cologne had a 'Sticke' this would be it).
S: estery and a bit bready, overpowers the hop aroma. body appears fuller despite identical OG and FG. As this one had a bit of chill haze the difference could be due to more protein, but the only difference was the fermentation. Appears less bitter. A lot like Saison Dupont both in colour, body and nose.
BTW: Unanimous preference for the cleaner #1007...

S: clear, golden colour, good head. Estery nose; very dupont-like. Good balance between between malt and lingering bitterness. carahell is exactly what's needed.
Much better than in december, yeast needs some time... |
