Poured wort rapidly into 6.5 gallon bucket (new I think) at 29C. Cooled in ferm fridge for 6.5 hours to 17.8C. Rehydrated Nottingham in 110 mL water at ~80F for 13 minutes, stirred, and pitched at ~12:30am. Ferm fridge set to 17C. |

PM - Fermentation began. Krausen forming and airlock bubbling. Decreased temperature set point to 16.5C. |
