Did a "no chill" and left kettle on basement floor/ferm fridge (when it cooled enough) for ~5 hours, transferred to carboy (glass 5 gallon) and chilled in ferm fridge to 18C over night.
Aerated and pitched ~0.75L of 1.25L starter at 8:30am 1-Nov-2015. The other 0.5L put in mason jar on stirplate to finish fermentation. WLP090 f5. |

Steamed 0.27 oz of Palo Santo wood for 10 minutes. Added to keg in nylon bag suspended with unwaxed floss. |

Pulled the Palo Santo bag out. Flavor was pretty strong with a big coconut slant to it. |
