Mash pH is 5.35 taken after 15 minutes of the mash. Mash holding at ~155. added heat at 35 minutes to bring back up to around 156. |

After 3 weeks it is starting to get near an FG. Color has more red than expected. not quite clear yet. taste is quite nice; slightly sweet, dry, a bit of funk, no perceptible hops, somewhat fruity. this should be a very pleasant brew. taking out of fridge (where it's been at 60*) and allowing to warm up to finish. |
