still fermenting strong. started very well after about 12 hours and has been going strong ever since. color has really changed for the lighter during fermentation. |

refractometer reading 6.7 corroborates with the adjustment to 5 gallons of 5.7 ABV beer. it is darker than I expected. probably a result of using the 80L malt. will use lighter stuff in next brew.
flavors are sweet with good bread flavors.
adjusting the salts, adding the acid blend and mash approach yielded a VERY good efficiency. almost too good.

moved into fermenterator for 2 weeks of cold storage and may consider a light dry hopping. |

holding comment until several weeks of bottle conditioning. However, to this point, this has been the most enjoyable and well managed brew session to date. If it tastes as good as I think it will once bottle conditioned. this will be the recipe to hold on to.

Okay - here we go again. there is really very little carbonation in this beer. last time this happened, I was still miffed at 21 days that low carbonation prevailed. then about day 30 it got super perfect. not sure why carbonation on these takes so long. |
