Add all salts to all waters 11.5 Gallons RO 5.5 gallons Mash and 6 Gallons Sparge. Add Gypsum 13 gm, Mag Sulf 3 gm, Sodium Chloride 0.5 gm, Calcium Chloride 1 gm, Mag Chloride 1 gm, Chalk 2 gm. Add no other acid or acid malt to mash. Mash target pH 5.3. Sparge with 6 gallons to collect 7.5 gallons, boil 2 hrs til 5.5 gallons.

Notes

Note Belgian Candi Sugar is home made amber. Around Mid color. Chinook hops are homegrown, IBU unknown. Actually added entire Chinook Hop Bine to the brew. Final IBU will be around 80 to 90. Adjust when boiling to really make hoppy. Two batches to be aged in 10 gallon Rum Barrel x 4-6 months. Not going for an aromatic hoppy ale. Want flavors to meld with the barrel flavors. Follows a Tripel that has been in the Barrel 6 months.
