Notes

Single step infusion mash of 152F for one hour. Use 15.6 qts of water for the mash. Use 22 qts of 170F water for sparge to yield 6.5 Gal.
Boil time is 60-90 mins to yield 5.5 Gal for fermenter.
Add hops according to schedule.
Add Yeast Nutrient and Whirlfloc at 10 mins.
At Flame out, add whirlpool hops and let stand 10 mins
Chill to 68F
Gravity 1.052
Aerate well
Pitch yeast
Ferment @ 60-72 deg
F 9 days
10/13 Rack and add 6 oz. hops for next 5 days.Gravity at racking 1.008
Bottled on 10/18. Gravity at bottling 1.006 for 6% abv
