Notes

Day 0: Vitality starter 1,000 ml wort with WLP838 for 4 hours, then pitch and ferment at 65F.
Day 10: Mix 170
F water with teaspoon of unflavored gelatine, add to keg. Rack clean beer into oxygen-purged keg, placed in fridge and set to 25 PSI.
Day 11: Reduce pressure to 10 PSI, then pour and dump a pint of yeasty beer.
Day 18: Sacrifice first pint, then enjoy.
