This batch was fermented with different yeast in each fermenter. One was US04 and the other was Wyeast 1099 slurry saved from previous batches; the 1099 was a 4th or 5th generation yeast. In my opinion, the 1099 has a slight estery or maybe peach flavor. The keg fermented with US04 seemed to let the hop profile come though more distinctly and was in general more in line with the flavor of the original SLA from Stone Brewing. At this point, I would recommend using US04 on all future batches. |
