Tastes quite good. Cap is intact. Sample is bubbling. Had been set at 50 degrees, which appears to actually be 46. A power off had reset to 41 for 24 hours. Installed thermocontroller and set to 52 |

persistant thiol smell. cloudy. sour note. Very slightly bitter. Started diacyl rest given 3 weeks of fermentation. Should have created a yeast starter. Concerned with sour note. May consider tossing if not improving in next week. |

Fined with gelatin, 1.t tsp in 2/3 cup 160 degree water. moved to refrigerator, which agitated it. No more sulfuric smell. |
