Gave up on grapefruit. Cascade hops are so fresh and smell very citrus already. Afraid of contamination or overfermentation.
21:14:00 Carared steeping at 69C
21:44:00 Carared out & rinced with hot water through collander
22:20:00 add 8g hops for start of boil.
22:50:30 add 4g hops. Prepare sanitizer.
23:10:30 add 4g hops, Irish moss. Boil strainer. Sanitize lid. Prepare ice.
23:19:00 add 4g hops
23:20:30 off heat and start cooling
00:06:00 cooled to 23.3C
00:35:00 all done. dishes rinsed already.
OG: 1.045 (taking thermometer out from top of bucket
OG: 1.055 (taking thermometer out from bottom of bucket with a few hops)
OG: 1.054 (same as above)
Had to discard ~100mL to leave space in the fermentor. Maximum safe amount is 4.75L or else it's tough to shake before pitching.
Next time cool in sink using tap water temperature during max temp differencial (try to save ice). |

Lots alot of beer in the sludge which was quite thick at the bottom, and about 2cm made it into the secondary. I should try to bottle ASAP.
Tastes quite hoppy in the manner of Yona Yona, and it is reddish too! Looking forward to it.
I will dry hop once I find some bottles. Hopefully it will ferment a little more over the next 4 days, then I can try hop for 5 days, and bottle by Friday 12 June 2015. |
