Added the honey in two steps. First pound at 30 minutes and second pound at 10 minutes. |

Made the yeast starter but did not let it ferment long enough before cold crashing. The started fermented for 30 hours before going in the refrigerator. The starter was still fermenting even at 36F after 24 hours. Ended up using the entire volume of the starter instead of decanting it due to the fermentation not being complete.
Lessons Learned: Allow 2-3 days for fermentation to complete prior to cold crashing for 24 hours. |

Transferred to secondary. Good clean taste with no hint of honey or sweetness. |
