Brewing Day Complete; All went well, great way to spend a Veteran's Day doing something for me as it were. Only hitch was I had to go to town to get parts to compelte a blow-off assembly which I had forgotten to order prior. All brewing was accomplished according to Northern Brewer Guidlines with an adjustment to the spice additions. |

Week 1 almost complete and the fermentation has almost completed. Activity has is very low currently but still showing a few signs of life. I think I will give it a few more days before transfering to the secondary for 2 weeks. |

Primary Fermentation is completed and the beer has been racked to the secondary fermenter for conditioning for about 2 weeks give or take. Pulled a taste sample as well to see where it is at. Fruity aroma is very prevalent with a malt background and just a touch of hops. The taste is a sweet malt on the front followed by a nicely bitter hop end. |

Still conditioning in the secondary fermenter. Today I added the cinnamon and some more ginger. Soaked both in just enough vodka to sanitize and added both vodka and spices to the secondary to steep for another week. With work in mind I should be ready to bottle and begin conditioning/carbonation by 5 Dec. |

The beer has cleared considerably and still has a sweet slightly fruity aroma about it. When tasted I can taste a hint of the cinnamon, ginger and some orange after taste, the anise does not seem to be present as much in the flavor as it is in the aroma. The hops bring a nicely bitter end to the ale. We shall see how it turns out once carbonated and aged for a little longer in the bottles. |

Bottled the beer tonight. All told it was 48 bottles with 12 of those being 11.2 oz bottles and the other 36 being 12 oz bottles. Used Cooper's Drops for 36 of the bottles and Brewer's Best Conditioning Tablets for 12 of the bottles to see the differences. Had an error in judgement when I filled and then found out I could not cap used Heiniken bottles as the neck flares to quickly. So I had to transfer 12 bottles from one bottle to another in order to cap them, so we will see how well those 12 turn out (oxidized, flat, etc.). |

Finally got to taste the finished product. Chilled in the refrigerator for 24 hrs after conditioning. I cracked open the bottle to the smell of bread and upon pouring I was happy to see the nice lines of carbonation and the half inch head that lasted a minute or two before becoming a very thin layer. The beer ended with a fruity aroma in the glass and a sweet malty flavor to begin. As time goes on I could begin to taste hints of cinnamon, ginger and orange peel though the anise seems to be lost. This is followed by a nice light bitter end from the three varieties of hops added. Will definitely be brewing this again and tweaking it from year to year because I think this will become my Christmas beer. |

Tasted one of my bottles conditioned with Brewer's Best conditioning tablets that had been conditioning for 2 weeks and in the refrigerator for one week. Upon opening and pouring there was almost no head on the beer with some spindly little streams of carbonation going to the top. The flavor was relatively the same as with Cooper's drops but with a much flatter taste. I will see if another one or two weeks at warmer temps builds more carbonation but not holding much hope. |
