I didn't measure the amount of water used for the mash I just added it until the mash was loose!
I got 66C pre mash and 64C post mash so it worked.
Relax, have a home brew! |

I needed 18lts of sparge liquor to make the boiler up to 35lts so I added 17lts to be on the safe side.
Lo and behold I was 1lt short so 34lts in the boiler it was! |

This was actually 25.5lts in the FV but then I added the 500-600ml starter of WLP 655 |

Not sure what to do with this, I need to take the gravity and see if it is down near final gravity.
If so then I am hopefully going to split this 5 ways into 5lt jerry cans with airlocks attached.
Some will have fruit added but I haven't formulated a master plan yet.....watch this space. |

Tasting very good, nice Brett character and a lovely 'Belgian' note to the aftertaste and aroma.
Now I just need to figure out what to do with 25 lts of this. |

X1 5lt - 510g dried cranberries
X1 5lt - 510g dried dates
X1 5lt - 100g Mosaic Pellets
X1 5lt - 900g raspberries |

x10 Bottles of #4 which was dry hopped with 100g of Mosaic, boy is it hard to get past that floating hop farm when bottling!!
7 Days dry hopped lets see how it fairs with some time. |

#4 Mosaic Dry Hop:
Wow. Not sure this was the best hop to use with a pale sour beer. I think it is more suited to a dark, dirty and dank IPA with some Caramalt in it.
Still very nice and citrusy but a bit sickly and the smell needs some refinement. Its still young so I haven't given up on it completely. Maybe it would be better to use something like Simcoe or Nelson Sauvin next time. |

Date Version:
Very nice indeed, very clear, it has a dark fruit background in the taste and had a definite sourness to it. I shall leave until 6 months old now.
Cranberry Version:
Not much sourness but a lovely aromatic fruit aroma and taste. Nice pink hue to it too, cloudy from cranberry particulate. Needs a little more time. |
