Notes

Steep grains in 1 gallons of water at 155ºF for 35 minutes. Rinse grains and remove.

Add 1 gallon of water plus the dry malt extract and bring to a boil.

Once boil begins, add the hops and other ingredients per addition schedule.

Add Irish moss with 15 minutes left in the boil.

Cool the wort to 75ºF and add enough cold water to primary fermenter to make five gallons.

Pitch yeast and aerate well. Ferment in primary for 5 days.

Rack to secondary. Add dry hops per hoping schedule and add sweet orange peel (sanitize with vodka). Ferment for an additional 8 days.

Rack to bottling bucket with priming mixture and 2 ounces orange extract.

Bottle and condition in bottle for at least two weeks.
