Wednesday morning. CO2 bubbles have slowed a little. Temp still steady between 17°C and 21°C. |

7 days. Fermentation bubbles have slowed. Unsure of temperature stability. Kraeusen still covering top of wort. added some warm water to bath to bring temp back up as well as the level, which had dropped due to evaporation.
Tasted wort. Incredible. |

Seven days in. Checked final gravity. Refractometer said 1.027. I felt like a failure. Double checked with hydrometer and it read 1.010!
Or course, I drank what was in the trial jar.
