Very cloudy, like muddy water, despite a huge trub cone being left in the kettle after cooling. Tastes great though. |

Only small amount of loose yeast trubbed, plus the sample still very cloudy and so suspect fermentation still active. Bubbling quite vigorously.

Fermentation at terminal gravity.
Fridge switched on to crash Fermentor temperature.
Beer Brite finings (x3) were added to the fermenator on Saturday 11th purged with CO2 and left for 48 hours to settle in the cold. |

3 full kegs packaged and charged with CO2 in Keezer. Brew looked nice and clear.
100g of either Citra, Simcoe or Nelson Sauvin added for dry hopping (for 10-14 days) |

Tested in the morning and o.g. now 1.014 so expect fermentation must be slowing. Problems with alarm setting on PID so fridge left on constantly to try and bring the Fermenator temp down before keg transfer and dry hopping |

All 3 dry-hopped varietals are now in their prime. The Simcoe is just awesome, it's one of the clearest beers we've ever brewed despite 100g of dry hops still in the keg! The Half Nelson is mellowing but still a little 'out there', the Citra is softer and less bitter (but not quite as good in my opinion) as the Simcoe. |
