  • lauter to kettle
  • bring to boil
  • cool to 60 C
  • setup thermometer
  • add carbonated water to create a CO2 blanket
  • pitch lacto
  • wrap with plastic wrap on wort and over lid
  • keep between 40 C and 50 C for 4 days
  • boil 60 minute with hops
