Added yeast today (about 36 hours after brewing). The delay was due to two things. First, I wanted to start fermentation with beer at 50F instead of pitching yeast at 70F and then cooling. The purpose was to reduce stress on yeast that might result in funky flavors. I accidentally switched the "beer" and "fridge" temperature probes, resulting in the fridge getting too cold and freezing the yeast (which were maintained in the fridge overnight while the wort cooled). I thawed the yeast Sunday and made a starter, which showed activity by evening. Pitched this starter this morning. All looks good. |

This was slow to start active fermentation due to yeast issue, but did appear to ferment reasonably well. Did a diacetyl rest for about 2 days and am now cold crashing. Will potentially rack today or tomorrow. |

Has been at cold crash temp for about a week (took out of FermWrap coozie last Saturday. However, notice that beer is not clear yet. So, added some gelatin this AM to try to improve clarity. Will rack tomorrow regardless, and then force carb at 30 lbs. Looking forward to tasting this. |

7.0 Brix on racking. A little cloudy still so may add gelatin to corny. |

Good flavor, more intense than Mickey's but reminiscent of the style. Corn lends some sweetness and not as dry as expected. Moderate mouth feel.Force carbonated and now has nice white head. |
