Notes

likely a reasonably large overpitch from using about a cup and a half of slurry, but the slurry wasn't super fresh

forgot gypsum and mash water was low by about 2.25 gallons, maybe due to boiloff or mismeasuring, but it resulted in a mash temp of 150 instead of 156. I added a carafe of boiling water to get it up to 152 after 10 minutes, then sparged another 2.5 gallons of room temp water to get the normal volume.

Fermented sans fridge in old-school style because I didn't rebuild the temp controller in time. Low 70s to start until stabilizing at ~69. Put into the fridge on day 2.5 and already at 1.014.
