Calculated from a refractometer reading with a WCF of 1.051. Taste is good: cinammon itself it not overpowering, but an overall hotness is presented between the cinammon, yeast esters and high ABV (given its relatively lower IBUs).
Color is a pinkish-peach rather than red...even the trub is pink! |

Seriously funky, no hint of cinnamon. Final gravity would suggest a 10.4% ABV, but clearly much of the attenuation were from Brett. species. No hop aroma, no hop bitterness, no cinnamon hotness...wild fermentation seems to have broken all of these down. Signs on the surface of some shellac having made its way to the fermenter (or an infection that looks similar). Dumped the whole batch. |
