Notes

The yeast was only 25% viable and really didn't appear to do anything for the first two weeks. I removed it from the fermentor during a cold snap and set it on the concrete in my basement. The cooler temp made the yeast come to life. The ABV in the fermentor was 4.6 so something was happening. The ABV after 1 week in the temp range of 48 - 52 was 6.2. I racked to secondary for 1 day and the beer clarified completely. It was very cloudy up to that point.
